What Makes Agave Spirits Unique?

• The Star Ingredient: Agave is a succulent native to Mexico, with over 200 species. Tequila is made exclusively from blue Weber agave, while mezcal can be made from various types of agave, including espadín, tobala, and tepeztate.
• Tequila vs. Mezcal: While both are distilled from agave, tequila is typically cooked in ovens or autoclaves, whereas mezcal is traditionally made by roasting the agave in underground pits, imparting its signature smoky flavor.
• The Aging Process: Agave spirits are categorized by aging styles. Blanco (or silver) spirits are unaged, reposado rests in barrels for 2–12 months, and añejo ages for over a year, creating a rich and complex profile.
